Day 1

Carbs: All About that Fiber!

Students will learn about the three dietary macronutrients: carbohydrates, fats, and proteins. Then, we will discuss how fiber is an important carbohydrate that helps clean our gut and prevents chronic diseases. Students will learn about whole grains as a high-fiber group of foods and how to differentiate between refined grains and whole grains.

Day 2

Fats: There’s 3 of Them!

This session will begin with a recap of the first day’s content on fiber. Students will get the opportunity to see, touch, and taste high-fiber foods, including fruits, vegetables, legumes, nuts, seeds, and whole grains. Students will play a game of sorting simple carb items from complex carb items. Students will then learn about the three different types of dietary fat (saturated, trans, and unsaturated) and be able to distinguish low-sat-fat items, high-sat-fat items, and unsaturated fat items.

Lets Cook! (Latin Cuisine)

Lets Cook! (Soul Cuisine)

Students will cook high-fiber, low-fat tostadas from start to finish. Portable stove tops and cutlery will be used, and students will always be supervised by adults. At the end, everyone will be able to enjoy the food they cooked.
